Healthy Fast Food: Breakfast Smoothie

It's not always easy to make sure everyone's eating well in our family. We have five people with different needs, likes, and body types. We're also busy, and don't always have a lot of time to put into making meals. 

Breakfast is always the biggest challenge. The girls are just getting up and need a lot of attention (diaper changes, bath, brushed teeth, dressing...), my son needs to be out the door in time for his first class, our toddler's in daycare, and my husband is often at work during this hectic part of our day. Even on the best of days, when we're all in a great mood, that can be a tall order. 
Having fast foods at the ready make my morning much more manageable, and fast food CAN be healthy! Here's a fast and healthy breakfast smoothie that even my incredibly plain and picky teenager LOVES:

Fast Healthy Breakfast Smoothie Ingredients

Breakfast Smoothie Recipe:

3/4 cup of milk (rice, soy, regular- whatever you prefer or have available)
1 cup of mixed berries (fresh when available, frozen works well too) 
3 tbsp of plain or vanilla yogurt
3 tbsp vanilla frozen yogurt
1 teaspoon of ground flaxseed
1/2 teaspoon of coconut oil


Throw ingredients into blender (in order listed works well), blending around 30 seconds, or until you have you desired consistency.

This breakfast smoothie is 
ready in less than 5 minutes, and provides calcium, fibre, vitamin C, antioxidants, and Omega-3 fatty acids. 

Although the cost per smoothie is pretty low (roughly $1.00), you can cut costs further by leaving out the yogurts, flaxseed, and coconut oil. Having berries on hand is also great to make sauce for waffles, pancakes, or french toast. Just heat a cup of berries (on stove if you have 10 minutes, or in microwave if you've got only 2), stir and pour over waffles. You can make it a very special treat by topping with powdered sugar, maple syrup, or honey.
