Reverse Super Size Me (Day 2) | Recipes

It's Day 2 of my NO wheat/grains, NO sugar, NO processed food, NO GMOs (oh, and I'm not supposed to have any dairy for the first two weeks) Reverse Super Size Me | Farmer's Daughter diet! PHEW that's a mouthful!

Toddler Yoga
My Toddler's Downward Dog- We're all focused on our health!
It's mostly organic, ethically grown, local meat and vegetables (and very minimal fruit) for me! While it's a little weird to prepare food for my kids food that I can't eat, I've also realized how much I usually 'sample' when I am making their meals. A nibble of this, a bite of that... it's no wonder my diet looked much different than I thought it would, when it came time to write it down. As an extension of that, you'll find my daily recipes here on the blog but you can also find my wheat belly experiences over on YouTube and Facebook. I'm facing what I eat everyday, and welcome you to tell me what you think about it!

Here are the recipes from Day 2:

Coffee 2 cups
*Yeah, I know. "Breakfast is the most important part of the day!"
But I wasn't really hungry. I'm sure the coffee had something to do with that.

Lunch | Eggs & Veggies

2 eggs (fried in organic, unsalted butter)

Plus Veggies & Dip
(cauliflower, broccoli, carrots)

1 cup of organic chick peas
2 tbsp plain greek yogurt
3 cloves of garlic
handful of fresh basil and chives
1/4 large (organic) portabello mushroom
pinch of sea salt

Put all ingredients into a tupperware container (for later storage), blend with hand mixer until you have desired consistency.

Total prep time: 30 minutes

Dinner | Pan Fried Steak and Onion with Veggies

2 Organic beef tenderloin (approx 16 ounces)
*One thing I love about this diet so far is that there's really no limit to the amount of meat I can eat (as long as it meets the standards).

Onion Rub
1/2 onion (diced)
2 cloves of garlic (minced)
1 tsp sea salt
1/4 cup of extra virgin olive oil

Steamed cauliflower & broccoli

Total prep time: 25 minutes
