Suck it Up | Reverse Super Size Me

Maybe I'm a little bitchy after my first week on this NO wheat/grains, NO sugar, NO processed food, NO GMO diet. Maybe. But it's not about food I'm missing. Sure, I wish I could have pizza... sugar in my coffee... BUT, I'm not really craving.

I AM, however, having a hard time keeping myself fed. As long as I'm at home, I can find time to prepare my meals, but otherwise, having food at the ready and keeping my metabolism in check isn't easy.

I feel like I need a hand. I'm spending the same amount of time preparing meals for my family, then extra time preparing my own separate meals. It's not realistic to put my whole family on this diet (yet), but is it fair to be cooking for everyone (foods I can't eat), and have no one cooking for me?

Reverse Super Size Me | The Farmer's Daughter Diet

Breakfast | Juice

I can often go the with little more than coffee in the morning, but in an effort to maintain more balanced energy throughout the day I've been putting our juicer to work, by tossing in:

1 Pear
1/2 Apple
1 Carrot

Prep time: 2 minutes (not including juicer cleanup)

Lunch | Blueberry Smoothie or Soup

Smoothie Recipe
1 Cup (Frozen) Organic Blueberries
1/2 cup Coconut Milk
1 Tbsp Cold Milled Flax Seed
1 Tbsp Plain Greek Yogurt
1 Tbsp Organic Virgin Coconut Oil (*Sent to me to try by the kind folks at Tropical Traditions)

Tossed in a blender, this is a very quick breakfast, lunch, or snack. 

Total Prep Time: 5 minutes

Soup Recipe
1L Beef broth
Approx 9 ounces cubed organic grass fed beef
1/2 head chopped cauliflower
3 stalks diced green onion
2 stalks diced celery
1 diced carrot
pinch of sea salt

This is a great hearty soup. All I do is heat the broth, then one-by-one add ingredients. I keep it simple, and it seems to pay off. Very tasty.


Dinner | Pan Seared Chicken Breasts

2 boneless organic, free range chicken breasts
(click HERE for great pan-searing tips for chicken)

The REALLY good part: The 'Sauce':
1/3 cup of extra virgin olive oil
1 1/2 tomato
1/4 large portabello mushroom
2 cloves of garlic
1/2 golden pepper
handful of spinach, fresh basil
1 tsp sea salt

Stirring occasionally, simmer on low heat until veggies are soft. Top chicken, and enjoy! This is one of the best meals I've ever had. Seriously.

Snacks: Raw almonds, raw veggies, spoonfuls of coconut oil 
(which may sound horrible, but on this diet your body REALLY needs the good fats)
Beverages: Water, Ethical Bean Fair Trade Organic Coffee, Organic Honey & Ginger Tea
